Add the oil to the pan and heat on low.Mix the pancake batter, water, egg, and flour in a mixing bowl and set aside.Chop the chicken into cubes. Coat in the pancake mix. Increase the heat of the pan to medium/high and prep the oil for frying.Add the pancake-coated chicken cubes into the hot pan and fry until golden brown. Remove each piece as it's ready and set aside on a baking rack or plate with a paper towel.Combine the sauce ingredients in a small pan on low heat. Mix until combined. Once ready, remove from heat and let cool a bit.Heat the wok up to cooking temperature and add a small amount of oil. Add the sauce from the small pan and heat on low. Add the chicken and stir-fry and toss until the sauce is evenly coated on the chicken and fried a bit more.Remove from heat and serve with rice or your choice of sides. Enjoy!
